<p>1 cup millet, hulled – 9 points   <br />3 eggs – 3 points    <br />½ cup flour&#160; &#8211; 2 points    <br />¼ tsp cayenne pepper – 0 points    <br />1 tsp salt&#160; – 0 points    <br />1 small onion, finely chopped&#160; – 0 points    <br />1 small bunch cilantro/coriander, chopped&#160; – 0 points    <br />3 tbsp margarine – 3 points    <br />3 tbsp extra virgin olive oil – 9 points    <br />2 cloves garlic, minced (or to taste) – 0 points    <br />1/4 cup finely diced carrots (or to taste) – 0 points    <br />1/4 cup finely diced bell pepper (or to taste)&#160; – 0 points</p>
<p>Soak the millet for at least 7 hours or overnight.    <br />Rinse the millet. Combine 3 cups of water and ½ teaspoon salt along with the drained millet in a pan. Bring to the boil, reduce the heat and simmer, covered for about 15-20 minutes or until all the liquid is absorbed.     <br />Leave the millet to cool down slightly.     <br />Blend the eggs with the flour and seasonings and fold in the millet, onion and coriander.     <br />Form the mixture into patties and lightly fry them in a mixture of butter and olive oil.&#160; </p>

<p>instructions:   <br />1.wrap the chicken breast in aluminum foil and bake at 350F for 30 min.    <br />2.meanwhile, bring the chicken stock to a boil.    <br />3.in another pan over low heat, combine ¼ cup of the boiling broth and the flour. cook and stir until smooth. gradually ad the rest of the broth, stirring until thickened. remove from heat.    <br />4.combine the skim and nonfat dry milk, and add to the broth, along with the wine and pepper.    <br />5.place the broccoli spears in a shallow baking dish. top with half the sauce. arange the cooked chicken breasts on top of the broccoli. combine half the cheese with the rest of the sauce, and pour over the chicken. sprinkle with parsley and the remaining cheese, and bake at 350F for 20 min. </p>

<p>i didn’t do very good at sticking to my plan today. the blender wasn’t clean, so i didn’t have a smoothie. i was supposed to have salad for lunch, but i’d already used up 2 of the heads of lettuce i got from AFM and i didn’t want to cut up the other ones yet, because i work this weekend and they’re more likely to last longer whole. i also forgot to soak the chickpeas for the moraccan chicken. i keep my meats in my dad’s big freezer at his house and pick them up from him once a week, so i couldn’t use anything else but chicken. so i had to switch dinners around with the next available chicken meal, which happened to be chicken alfredo. i hate switching meals around. it becomes a slippery slope, and my diet tends to go to hell.&#160; though, i managed to not only stay in my points, but accidently went under, so i guess it wasn’t so bad. </p>
<p>i’ve become quite fond of chef boyardee’s 99% fat free ravioli. 6 points for a whole can, compared to 10 in the regular. great easy lunch when i’m feeling lazy. i can’t even tell the difference from the regular. i saw some pictures of some cheese one’s too, but i’ve only ever seen the beef in stores around here. i hope they expand the line. i would eat low point beefaroni until i was so sick of it i’d never want to see a little tubenoodle again. lol </p>

<p>boca burgers were on sale for $2.50 for a box of 4 today. that’s almost half price! the store brand of sparkling water had three, maybe 4, new flavors, pomegranate berry, acerola cherry plum, and acai blueberry they also had a blackberry raspberry one, but i’m not sure if that’s new or not. the acerola cherry plum is fantastic! the pomegranate berry is good, but i’m drinking it warm, and it’d be better cold, and it has a very slight diety taste. i’m not so keen on the acai blueberry, but it could be good for adding extra flavor to smoothies.&#160; </p>

<p>i got some <a href="http://www.michelinas.com/ProductByBrand_AT_15207_Rockin_Tacos_7Snack_Rolls.aspx" target="_blank">michelina’s “rockin tacos” snackers</a>. i didn’t check the points before i got them. 7 points for the box. their about an inch square and there’s about 15 of them per box. i can have 5 for a snack. 5 square inches of food isn’t much. XD but i was craving them, so i had them anyway. lol</p>
<p>according to the scale this morning i lost half of a pound. not bad. i’m going to wait and weigh in again friday for my official weigh in, though. </p>

XD but it was food. </p>
<p>i got a pack of precut salad from aldi’s on thursday for 50 cents! it was fairly small and i figured it would only make about 2 salads. with using it for snacks and making small salads, i just today ended up using the last of it. i also thought it might be near it’s expiration date with it being so cheep, but it was perfectly fresh the entire time. i might have to start getting salad more often. i wasn’t using a lite dressing either, so with proper dressing and being an even lower point snack, it sounds like a great deal to me. </p>
<p>i’ve decided to start weighing in on fridays. with working on mostly weekends, saturday is more of a start-of-the-week for me. i may weigh wed. and fri. this week, or i might skip wed. i haven’t decided yet. and i’m not sure what to do with my weekly points. i guess i’ll just have to watch myself extra close until friday. </p>
